Crispy Latke with Smoked Salmon

Recipe

Ingredients:

  • 2-3 potatoes, or frozen grated potato hash if you wanna be lazy but almost just as good

  • Smoked salmon

  • Fresh or dried dill

  • Creme fraiche or just sour cream honestly

  • Whatever seasonings you prefer for your potatoes

    • salt+pepper+paprika+garlic powder+onion powder is usually a good blend but go crazy

  • Avocado oil or other high smoke point oil


Instructions

  • Take your potatoes and use a large hand box grater to grate them

  • With all the grated potatoes, you want to really squeeze all the water out of them to get them crispy, so put them in a washcloth or paper towels and try to get as much out as you can

  • Season the potatoes with your spice blend

  • Now two options depending on what you got on you:

    • Waffle maker: you can just fill that up with your potatoes to cook them until they're super crispy, this is a good lazy hack

    • Cast-iron skillet or other good pan: heat it up with some avocado oil and spread the potatoes super thin across the whole pan and really let them sit until its all crisped up, and then flip it over, pretty straight forward you get the idea

  • Now just top with your smoked salmon, add a dollop of your sour cream/creme fraiche, and dill


Other tips: -obviously as with everything, feel free to add whatever you want for texture, like onions, chili crisp, chipotle mayo idk
