Whipped Ricotta with Fried Garlic, Rosemary, and Hot Honey

Ingredients 


  • 1 cup whole milk ricotta cheese

  • 1–2 tbsp olive oil

  • Salt and freshly ground black pepper, to taste

  • 3–4 garlic cloves, thinly sliced

  • 2 tbsp olive oil (for frying garlic)

  • 1 sprig fresh rosemary (or 1 tsp chopped)

  • 2–3 tbsp hot honey (Mike's is fire but the regular isn't even spicy)

  • Crackers or toasted bread to go with it



Instructions



      • In a food processor or mixing bowl, combine ricotta, olive oil, a pinch of salt, and black pepper.

      • Blend for 1–2 minutes (or whisk vigorously by hand but this takes so long to get it smooth ngl) until ultra smooth and fluffy.

      • Taste and adjust seasoning.


    1. Fry the Garlic and Rosemary:


      • Heat 2 tbsp olive oil in a small pan over medium-low heat.

      • Add sliced garlic and rosemary sprig (or chopped rosemary).

      • Cook gently, swirling occasionally, until garlic turns golden and crisp — about 3–5 minutes.

      • Take the oil off the heat and save it, or just take the garlic out if you don't want the olive oil


    2. Assemble:


      • Spread whipped ricotta on a plate or shallow bowl.

      • Drizzle generously with hot honey.

      • Scatter fried garlic and rosemary on top (+ oil)

      • Finish with flaky salt, if desired.
