Whipped Ricotta with Fried Garlic, Rosemary, and Hot Honey

Ingredients
1 cup whole milk ricotta cheese
1–2 tbsp olive oil
Salt and freshly ground black pepper, to taste
3–4 garlic cloves, thinly sliced
2 tbsp olive oil (for frying garlic)
1 sprig fresh rosemary (or 1 tsp chopped)
2–3 tbsp hot honey (Mike's is fire but the regular isn't even spicy)
Crackers or toasted bread to go with it
Instructions
In a food processor or mixing bowl, combine ricotta, olive oil, a pinch of salt, and black pepper.
Blend for 1–2 minutes (or whisk vigorously by hand but this takes so long to get it smooth ngl) until ultra smooth and fluffy.
Taste and adjust seasoning.
Fry the Garlic and Rosemary:
Heat 2 tbsp olive oil in a small pan over medium-low heat.
Add sliced garlic and rosemary sprig (or chopped rosemary).
Cook gently, swirling occasionally, until garlic turns golden and crisp — about 3–5 minutes.
Take the oil off the heat and save it, or just take the garlic out if you don't want the olive oil
Assemble:
Spread whipped ricotta on a plate or shallow bowl.
Drizzle generously with hot honey.
Scatter fried garlic and rosemary on top (+ oil)
Finish with flaky salt, if desired.
